Now, how can you do both of these green things EASILY? I am not here to make your life more difficult and complicated. So I’ll point you to a few resources that will hopefully simplify things for you:
1) When it comes to sustainable living, Marjorie Alexander’s Sustainable Mind podcast has ton of awesome ideas. You can listen to her interview with me (which was tons of fun), and I also love this interview about “Ugly Fruit and Veg” with Jordan Figueiredo. You are sure to get some ideas and be inspired!
2) Now, about eating those greens. I DO turn to more cooked foods like soups and stews during the cold winter months, but that doesn’t mean you can eat amazing salads to get some fresh nutrients and enzymes. This is a wonderful side dish for the winter months when you crave just a little more color and zest. Grab the best and freshest greens you can find and make this dressing:
1/4 cup fresh orange juice
2 T fresh lime juice
2 T fresh lemon juice
2 T rice wine vinegar
2 T honey
1/2 t sea salt
1/3 cup olive oil
1 T fresh chopped parsley
1 t fresh thyme leaves
Whisk all ingredients together, or blend in a Vitamix. Enjoy!
(And notice how I’m asking you to please make your own salad dressing; So much healthier, tasty, and good for the earth; avoid those salad dressing bottles that end up in the trash!).
If you are feeling REALLY inspired, grow your own (organic) greens.
