Why not start your day with some greens in a Rainbow Smoothie? Kids love the concept of eating a rainbow, and the topic is on fire right now as kids get their hands on to the new children’s book, Give It a Go, Eat a Rainbow. I have served this delicious smoothie as part of Rainbow Day programming to promote fresh fruit and vegetable consumption by kids. The verdict? Thumbs up!
