We are just over two weeks into the Corporate Wellness Challenge at the Wood River YMCA. I was thrilled to hear that this week, in addition to logging our physical activity choice and lifestyle choices, we would all submit a photo of our healthy plates. My image shows half of my plate as fruits and veggies (one of the areas tracked as part of the challenge) along with lean protein (fish) and whole grains (quinoa). I also liked that it had more than three colors, although colorfulness is not a metric tracked in the challenge. This was a delicious meal that everyone in our family enjoyed. I hope you are inspired to build your own healthy and colorful plates!
